No Bake PB, Chocolate, Oatmeal Cookies

 Growing up, my mom made these a lot and we loved them in our house. Now, my boys love them too!  They are so easy to make...and so easy to eat a bunch at a time, so watch out! I have a feeling I will make these again soon b/c most of the ones I made were for play dates and a potluck!!

Peanut Butter, Chocolate, Oatmeal No Bake Cookies:

½ cup (1 stick) butter
2 cups granulated sugar
½ cup milk
4 tablespoons cocoa powder
½ cup peanut butter
2 teaspoons vanilla extract
3 cups quick-cooking oats

1. Add the first four ingredients to a 4-quart saucepan.
2. Bring to a rolling boil and let boil for 1 minute *make sure to do this pretty exact for the right consistency!!
3. Remove from heat.
4. Stir in the peanut butter, vanilla and oats until smooth. I let it sit and thicken just a smidge (couple minutes) before I continue.
5. Drop by heaping spoonfuls onto wax paper-lined baking sheets. You can really make them any size you want.
6. Let cool until set. I put mine in the fridge to set, so I can eat them as soon as possible!!  :)
